I'm a bit embarrassed to share this, but since it was a once-in-a-lifetime experience, and since I feel pretty lousy this morning, which should insure it is only once, I will share something wonderful and decadent. I knew that Steve's business partner made reservations for six people at One Market Restaurant in SF, but what I didn't know when he said that we had a table in the kitchen was that we had our own private booth with our own private menu with the chef right there for every course of which there were eight, and that it would be such magnificent food and experience. I recommend it and I must say that the next day is not so great.
What I learned is how carefully the food is prepared there. We saw where it is stored and where they cut up the beef and chickens. We saw huge, huge, huge pots of stock bubbling away and bottles of good wine poured in. It was absolutely amazing. They have a pastry chef with three helpers. Everything flows beautifully, and the people working in the kitchen look like they are meditating. It is very different from kitchens as presented in the book Kitchen Confidential. The chef-partner Mark Dommen had read the book, and said there are restaurants like that and there are restaurants like this, and he chose to go for this. I'm glad he did.
What can I say? I have the menu here, but it almost makes me sick to look at it at this point as I so full and so hung over. What I will say is that it is a lovely experience, so maybe just once in your lifetime, ask for the booth in the kitchen and be prepared to be overwhelmed at the depth of love and care and beauty of presentation. Everyone there is so happy, and happy to share. It is quite the experience, and be prepared that you will pay for it the next day.
I'm signing off to go stand in the shower. My morning coffee is not bringing me back quickly enough. It was lovely, once. I'm not sure I could do it again, but it is certainly making food planning easy today. Nothing! Nada!! Water, water, water - enough!
